Happy weekend!! We are still busy over here with getting settled in. I know Ken and I will be utterly happy when we don't have to do anything extra to do...just a normal day-to-day routine plus our dates on the weekends. We will at least be on more of a schedule this coming week, as our kiddos start at their new school! And I've managed to get on a bit of a schedule with work, with just a few extra things on my to-do. I hope you all have a good weekend and enjoy some of my favorite links from the week. Easy Appetizer: Phyllo Egg Cups


Need an extra easy appetizer for your holiday brunch? These Phyllo Egg Cups are so cheap, easy and delicious. All you need is a box of frozen pre-baked mini phyllo cups, eggs, and fresh parsley. These are simply phyllo cups filled with scrambled eggs, garnished with parsley.

The phyllo cups are in most grocery stores, in the frozen dessert & frozen fruit section. These little phyllo cups are completely ready to go. You don't even need to warm them in the over. Simply let them come to room temperature while you prepare your eggs.
 
You can even cook your scrambled eggs ahead of time and warm them in the microwave the day of your party. I used a melon baller to scoop the eggs into the cups. You can switch it up with different garnishes like mini capers, parmesan shavings or chopped scallions.
 
*Entertaining Tip: Buy a large amount of the mini phyllo cups and save on prep time by using the cups to make several different dishes, from other hot appetizers to mini desserts like fruit tarts.
