Spice Up Your Pancakes for Fall

My daughters and I love making pancakes for a weekend brunch, especially during fall. Though don't get me wrong, I rarely make them entirely from scratch. I do love to bake and cook homemade, but I don't want to spend all weekend doing it. Still that doesn't mean we sacrifice on flavor, not one bit. This weekend we added ground cinnamon, nutmeg and liquid maple flavoring to the boxed pancake mix.

Next time you have a cozy Sunday brunch, try spicing it up with these fall flavors (based on mixture of 2 cups dry pancake mix):

1. Apple Cinnamon: add a peeled, finely chopped extra large Granny Smith apple and 1 tspn of ground cinnamon

2. Cranberry Orange: add the zest of one large orange and one cup dried cranberries (soak the cranberries in water beforehand until they plump up a bit)

3. Vanilla Spice: add 1 tbsp vanilla extract, (optional): seeds from 1 fresh vanilla bean, 1 tspn ground cinnamon

4. Butterscotch: add 2 tbsp liquid butterscotch flavor

5. Pumpkin Spice: add 1 tbsp vanilla extract and 1 tspn pumpkin pie spice

*The possibilites are endless. You can use any combination of spices and flavoring extracts. Make them into dessert with candy sprinkles or chocolate chips. Add a cup of fresh, dried or thawed frozen fruit, and you can also add nuts or oats. For a rich, hardy texture and flavor, start with an instant pancake mix in whole wheat or buckweat. Then don't forget to drown them in maple syrup!
