The Best Prepackaged Pumpkin Spice Cookie Mix featuring Betty Crocker


I love to bake from scratch, but during the busy holidays, I also love to use boxed or bag mixes. I know it isn't much more difficult to whip up some pumpkin cookies from scratch; but something about having to dig up a recipe, get out all of the ingredients, and dirty up several bowls and measuring cups just feels like too much work at the end of a busy day. Though just to get out one bowl, dump in a few things, and stir it up with a spoon - that's my ideal form of baking as long as it tastes good. Unfortunately there lies the problem that some prepackaged baking mixes don't turn out so well - often dry and bland. One way to combat this is to swap out water with milk or cream and oil with real butter, though I can't always do that since my daughters can't eat dairy. This holiday season I took my chances with a prepackaged mix for pumpkin spice drop cookies, and both my daughters and I were so impressed with the end result, I just had to share it with you. If you look at the comments on the Betty Crocker website, you'll find hundreds of comments from people who go crazy for this cookie mix.

We started with the Betty Crocker Limited Edition Pumpkin Spice Cookie mix and added 1/2 cup pumpkin puree to the batter. The pumpkin spice flavor was a little mild. I loved it that way, but if you prefer your pumpkin cookies to have a strong spice flavor, add a dash or two of pumpkin pie spice, cinnamon, or nutmeg. The cookies also had a mild molasses flavor to them. They tasted more like pumpkin gingerbread cookies to me, which only made them so much more delicious. I topped them off with prepackaged Duncan Hines Creamy Home-Style Cream Cheese Frosting. I always start to crave cream cheese frosting on my holiday cakes and cookies, though it's not something I can make dairy-free from scratch. The Duncan Hines ready-to-serve cream cheese frosting is both gluten-free and dairy-free, and it tastes quite amazing. The girls and I garnished the pumpkin spice cookies with fall-leaf confetti sprinkles. I find it's always best to have an extra little dessert for the holidays, in addition to the main pies and cakes. These are delicious and festive cookies to add a quick dessert to your Thanksgiving buffet.



I especially love how there is no rolling or cutting out involved. You simply mix the batter then spoon in onto a baking sheet. There are so many things you can add in to switch up the flavor; like dried fruit, extract flavorings, or nuts. I can see this cookie mix being perfect for other quick holiday pumpkin desserts like pumpkin dessert bars, soft scones, and cake balls. I'm going to have to stock up. It comes in other flavors; next my girls and I will try the Betty Crocker Molasses Cookie Mix!
