Q&A: Thanksgiving 911

Every Thanksgiving hostess has his or her moments of anxiety. Hell, I've been making holiday dinners and hosting dinner parties for a decade, and I still get a little nervous when it come to roasting the perfect turkey. That combined with kids, houseguests, and having to make an endless supply of side dishes all timed in perfect harmony...it's a lot for one person. Easy Appetizer: Cucumber Bites with Cream Cheese

 

Here's a quick and easy appetizer before I hit the road for Texas. I made these for a bridal shower this spring, and people loved them. They couldn't be more easy or affordable, and they're so delicious. It's easy appetizers like this that make entertaining go off without a hitch.


You just need a couple of crisp cucumbers and cream cheese to make them. Cut the cucumbers into 1/2" slices and top with the cream cheese. I'd say the tricky part is that the cheese has a tendency to slide off the cucumber slices. I used a melon baller to scoop some of the seeds out from the top side before I topped it with the cream cheese. You could also pipe it on with an icing bag. This isn't an appetizer I'd recommend you prep ahead of time, because the cucumbers could get soggy, but an hour or two before an event is just fine.

From there you can garnish with so many different things. I simply used dried Italian herbs, because that was what I had on hand, and I also wanted a vegetarian, gluten-free option. Though you could top these with bits of bacon, prosciutto, smoked salmon, tomato, scallions, so many different options.
