Blueberry Lemon Smoothie


This blueberry lemon smoothie is not one of those smoothies in which I try to get you to sneak in veggies. It's simply blueberries, fresh lemon zest, and a few basic ingredients. I love to combine blueberries with lemon in my dessert recipes, and while I've been on a smoothie kick lately and had leftover lemons and blueberries from a recent recipe shoot, I thought hmmm blueberry lemon smoothie! It turned out quite delicious. I'm dying to try it in some popsicle molds as a frozen treat. If you make it with unsweetened almond milk, it's quite low in calories, and I used Stevia to make it free of added sugar. I've found that anything made with blueberries or chocolate do a great job of covering up that Stevia aftertaste.

INGREDIENTS
  • one cup unsweetened almond milk (or regular milk)
  • one large ripe banana
  • 1 & 1/2 cups frozen blueberries
  • zest of two lemons (be careful not to get the white pith - it'll make the smoothie taste bitter)
  • juice of one lemon
  • one packet Stevia

*Blend until smooth. Enjoy!
