Zesty Blueberry-Lemon Smoothie

This blueberry lemon smoothie is not one of those recipes in which I sneak in veggies, like my usual fruit and kale smoothies. It's simply blueberries, fresh lemon zest, and a few basic ingredients; and it's a powerhouse of antioxidants and other good stuff. And it's yummy!

The fresh lemon juice aids in digestion, contains vitamin C, and hosts multiple other health benefits. Also packed with vitamin C, the blueberries serve as a powerful antioxidant, along with their own set of healthy benefits, including fiber.

If you make it with unsweetened almond milk, it's quite low in calories, and I used Stevia to make it free of added sugar. I've found that anything made with blueberries or chocolate do a great job of covering up that Stevia aftertaste.

INGREDIENTS
  • one cup unsweetened almond milk (or regular milk)
  • one large ripe banana
  • 1 & 1/2 cups frozen blueberries
  • zest of two lemons (be careful not to get the white pith - it'll make the smoothie taste bitter)
  • juice of one lemon
  • one packet Stevia
*Blend until smooth. Enjoy!
