Welcome to another Friday Finds! Can you guys believe it's the weekend before Thanksgiving?! Time has been flying by since we moved into our new home, and I'm miraculously keeping up with all of the PR samples and promos and photography. White Chocolate Carrot Cake


Carrot cake is an essential dessert for Spring entertaining. And while I love a classic spiced carrot cake with cream cheese frosting, these white chocolate mini cakes are such a cute variation. What I totally love about it is you don't have to have a lot of cake-decorating skills to make such an adorable dessert. All you need are some pre-packaged white chocolate bunnies.


INGREDIENTS
  • 2 cups all-purpose flour
  • 1 tbs ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/2 tsp 
  • 1/4 tsp salt
  • 2 cups packed light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup vegetable oil or butter
  • 1 cup milk (or dairy-free option)
  • one pound of freshly-grated carrots
  • 12 oz. bag of white chocolate chips
  • 1 tbs butter or shortening

DIRECTIONS
  1. Preheat oven to 350 degrees Fahrenheit. Grease your mini bundt cake pan.
  2. In a large bowl, soften the butter or add oil and mix in the sugar, eggs, vanilla, and milk. Mix until thoroughly combined.
  3. In a separate bowl, whisk together the dry ingredients - flour, spices, baking soda, and baking powder and slowly add to the wet mixture. Blend until just combined.
  4. Fold in the carrots and one cup of the chocolate chips.
  5. Bake about 30 minutes or until center is cooked through. Allow to cool.
  6. Place the rest of the chocolate chips and the tbs of butter or shortening into a microwave-safe dish and cook for 30 seconds at a time, stirring each time until melted smooth with no lumps.
  7. Use a rubber spatula or butter knife to spread the melted chocolate onto the tops of the mini bundt cakes and top each one with a chocolate bunny. Place in the fridge for 30 minutes to cool and allow it to set. (You may need to press the bunny down into the cake a little to make it stand up.)

You can do the same process with chocolate cake, milk chocolate topping, and a milk chocolate bunny if you're not a fan of carrot cake. Have a lovely Easter!
